Fried squid with Swiss chard and potatoes - Pržene lignje i blitva sa krumpirom

Ingredients Ingredients Swiss Chard

1 kg squid

1 kg Swiss chard

100g flour

600g potatoes

sunflower oil, for frying

2tbsp olive oil


2 garlic cloves, chopped

lemon wedges, to garnish

Serves 4-6



Cook the potatoes in salted water for 15-20 minutes until tender. Drain and cut into cubes. Wash the Swiss chard, cut the stems and gently steam in salted water until tender.  Drain well and chop.

Put the potatoes and Swiss chard into a bowl. Add the olive oil, garlic and salt. Toss gently to mix.

Clean the squid by pulling off the head and backbone. Discard the innards, peel off the skin and wash the squid thoroughly. Pat dry with kitchen paper and slice into rings, leaving the tentacles whole. Toss the squid in the flour until lightly, but evenly, coated.
Heat the oil in a large frying pan and fry the squid rings in batches for about 2-3 minutes until golden brown. Drain well on absorbent kitchen paper and sprinkle with salt.
Place the fried squid on a warm dish and serve with the potatoes and Swiss chard. Garnish with lemon wedges.
