Primosten style chicken - Pile na Primostenski nacin


1 chicken, about 1.3kg

1 tbsp tomato purée

salt and ground black pepper

50ml sherry

2 tbsp flour

200ml water

50ml olive oil

400 new potatoes, peeled and cut in half

1 onion, chopped

1 rosemary sprig, chopped

50g prosciutto, chopped

50g capers

2 garlic cloves, chopped

300g frozen peas

3 tomatoes, chopped

parsley, chopped

Cut the chicken into pieces, sprinkle with salt and coat in the flour. In a large saucepan, fry the chicken in the oil for 5 minutes or until golden brown on all sides. Remove and set aside.

Put the onion in the same oil and fry gently for 5 minutes until softened. Add the prosciutto and garlic and cook for a further 2 minutes. Add the tomatoes, tomato purée and chicken pieces. Pour in the sherry and water and season with salt and ground black pepper. Add the potatoes and rosemary and simmer for about 20 minutes.

When the meat and potatoes are almost tender add the capers, peas and some more water, and cook for a further 10 minutes.
Sprinkle with parsley and serve..
